BRIEF

Steph’s client, Andrew Severn, is looking for a cafe to launch his concept and provide freshly baked goods with outstanding service. Steph has attended viewings of various cafes across the Yorkshire towns of Ilkley, Wetherby and Northallerton to advise on the commercial potential of the premises before the client purchases the lease.

WHAT THE CLIENT SAYS...

Steph’s consultancy delivers commercial insight and a wealth of culinary experience with a practical approach. She has encouraged me on my journey, provided advice on premises and location, and given me the confidence to say ‘no’ when an opportunity is not quite right. I would wholeheartedly recommend Steph to anyone considering starting or growing a food-based venture.

BRIEF

To assist with the transition from a 40-seater to 100-seater cafe. Working with the Head Chef and team to develop the food offerings and menu design, and plan the logistical approach for a much larger operation.

WHAT THE CLIENT SAYS...

Steph was the first person I thought of to help us when we started the building work, doubling the size of our farm shop and cafe. The transition from 40 to potentially 100 covers really worried us, particularly as the opening would fall at the start of the summer holidays. We were aware that our good reputation could so easily be lost if we didn’t get it right.

Steph was a joy to work with. She has such a lovely manner, totally engaging the team and getting the best out of them and giving us all the confidence to move forward and embrace the changes.

She guided the Head Chef in up-scaling the kitchen operation in terms of the service flow and working methods, menu development, extra equipment and also the number of staff that would be needed on completion of the project.

On the first day working together, Steph recommended some new signage for the entrance and lead up area to our farm shop and created a Brunch menu with Chef, both of which proved successful and I would imagine paid for the fees several times over!

Last summer, my husband became a jockey for the day in the Macmillan Ride of their Lives at York Racecourse. In order to take part, he had to raise several thousand pounds for the charity. Steph generously offered her time to put on a Pop-Up Restaurant at the Cedarbarn. She spent two full days of her valuable time and the evening with Chef Mike, preparing, creating and serving an amazing meal and the evening raised over £2,000 for Macmillan Cancer Support.

Steph is a true professional, extremely good value and I would highly recommend working with her.
